
Makin’ Rikia

A few weeks ago, we went to help make / see how rikia is made. the volunteer I’m replacing – Billy, made this great video about it:

The process is pretty simple – put a bunch of fruit in a barrel for a few months, take the resulting crazy looking mixture, put it in a canaster above a fire, gather the vapor and send it through a tube through cool water to condense it, and the resulting liquid is rikia.
